Homemade beetroot hummus
So yet again I'm attempting to get back cooking from scratch and today I tried a recipe for beetroot hummus ........ I now can't stop eating it, everyone on instagram is messaging me for the recipe so I thought I'd share here to save time and also as it really is THAT good ! ( don't be put off by the faffing around with beetroot )
I tweaked the original recipe so will post the measurements I used 😉
3 fresh beetroot ( you can buy these in the supermarket and they look like baby red turnips and usually next to the salad stuff )
1 tablespoon of tahini paste ( its In a jar on the world food section in Tesco)
1 garlic clove peeled
1 lemon ( zest and juice - I just finely grate )
3/4 of a tin of chick peas ( drain the juice )
Wrap each beetroot in tin foil and pop in the oven 170degrees for 1 hour
Leave to cool
Cover your hands in olive oil or sunflower oil ( this will stop your hands turning pink on the next stage !)
Rub the beetroot with kitchen roll and the skin will just come off the beetroot
Put all the ingredients in a food processor or if you don't have one, use a blender !
Pulse until it's the consistency you want it to be 😉 add some water if too thick and enjoy !
I got a mini wrap and dry fried it and then cut it into triangles with scissors to dip in to the hummous like tortilla chips and the Z's also had cucumber, carrot and pepper sticks to dip in theirs 😉seriously delicious and perfect love island treat😉😂
